Seems difficult to advise. I'd go with the stable company since I have to have a steady income. But it all comes down to what you want and how much safety you need.

I started fresh from University in a settled company with a "stable" product and I'm totally struggling with the way of fixing shit others made and only little opportunity to change things. -
I forgot to mention that this is also the problem of the size of hierarchies in my company.
