Quick question, if anyone knows.
Does Wireguard encrypt traffic end-to-end or only between neighbor peers?

Encryption is between peers. Servers are peers. If your neighbor router is the server peer (acting gateway), it will end at the neighbor, and a second tunnel would be required between the neighbor and another peer to secure end to end.
