When initially you are told to just quickly create a POC,
So you do without creating a proper architecture, then they tell you to add these new features for the time being, then they keep adding random more new features and eventually your code becomesa complete mess :|

Followimg the SDLC and having the project plan documented and the requirements signed off on will help these issues. Otherwise, as you mentioned it becomes a mess. What do you think?

Yes you are right, ideally it should have been like that

Basically here companies compete to deliver the project as fast as possible with least expanse on the additional resources, thats why they dont care about the proper project plan or even in depth documentation of the requirements
