What do they like to hear?

Security
Transactions ACID
Backup rollback
Triggers

I have a clean criminal record.

You: I can code in Java, Lava, C, Python, Snake, Volcano.😎
Interviewer: Can you use spreadsheet?🤷
You: ?

I create a lot of tech debt and I regulary repay it.

Depends on the position you are applying for and the company culture. Generally speaking as a developer:
- messaging, routing, interfacing
- end 2 end processes
- automation
- legal boundaries
- digital services focused on the customer
