Yesterday I've fucked up everything as well. Turns out that having the parent process initialize a child process that kills the parent and starts another child is a bit more complicated than I thought. Hot reloading, more like hot "quick reboot the machine".

Doesn't PHP has frameworks than run and are statefull already?
Well, to answer OP, I really don't like PHP but I also think it is more mature and you will find more resources for it.
If you go with Node.js, just pick a node+express tuto on udemy/youtube and you should be ready to go.
Actually, do it for both languages/platforms and decide by yourself! -

Write unit tests. A lot of them. Then refactor.

Edit: By the way, if the language supports, make sure to use the /x flag and split the regex into separate lines. -
Sometimes it is easier to just start a new repo from scratch other then fixing the mess if you don't care that much about the history in the same repo.
Just keep the old one and append "-old" to it. :P -
Rolling your own encryption is the safest way to store sensitive data!!!!!!

I have a friend that literally sends 5-6 voice messages of more than 1 minute in a row.
I already told him that this is like the most annoying way of talking to someone but he won't listen. -
I can't agree with this.
Laptops nowadays are just as powerful as a desktop PC with the added benefit of the portability (damn light!).
Being a very minimalist kind of guy, just having one computer that I can bring anywhere I want or just arrive home and plug my kb+mouse and external monitor is perfect.
I miss my gaming days, tho. Currently craving for more advanced computing and graphics (less thermal throttling) on laptops.
