vim > emacs. pressing ctrl+shift+meta+x+i+m+%+ß (rough estimate of what a normal emacs "shortcut" looks like) is not ergonomic.

It doesn't really make sense, in this example Gmail is really a placeholder for *any* mailing software, it's just demonstrating the concept of how to send an email.

If someone has to ask how do I edit it, then you telling them about emacs is probably the worst thing you can do to them as a human being. Just saying. Even knowing notepad would be a big thing for them.
